Works with everything from seafood, to spicy soup to french fries. Or pair it with absolutely nothing and savor with one of your favorite companions. Already it reminds us of freshly cut lemons, stone fruits and bergamot. A clean and concise minerality anchors the mid palate. Ready to ship in March and ready to enjoy the second it hits your doorstep.
A native of the Jura region, Trousseau Gris is a true "Grey" grape and can make either white wines or slightly colored wines. We choose to press the grapes the moment they arrive at the winery, opting for a fresh white wine style. Pressed lightly to avoid any bitterness, the juice is transferred to stainless steel barrels. The wines ferment at low temperatures and can take as long as 6 weeks to ferment to dryness. We age the wine on its lees, and assemble and bottle the blend in February. The wine does not go through malo-lactic fermentation, has no oak influence and has no residual sugar.
